Ma's Christmas.

For the last two years...on the last Sunday before Christmas Day, we take the day to remember my amazing Mom-in-Law {aka Mom-in-Love}...and we do it by making her legendary meatballs!

Not only are the unbelievably divine...like seriously lip smackingly scrumptious...the only Christmas I got to spend with her...we had her meatballs for lunch.

So it's our little way of taking time out, before the craziness starts, to remember her.

So ladies...guess what I am posting for my Cookbook Challenge...yes...the recipe...you will thank me later...they are that good. Warning: This is not the healthiest  recipe around...but the really good ones never really are hey?
Ingredients: 1kg beef mince; 1 egg; two handfuls of oats; 1 packet of brown onion soup; 1 can of chopped tomatoes; 1 large finely chopped onion; 2 tablespoons of chutney, salt and pepper; as many potatoes as you would like.

Mix the mince, onion, can of tomatoes, brown onion soup, chutney, egg and oats all together, season with salt and pepper. Roll the mince into meatballs, lay in a pan/s. Slice the potatoes and lay them in between the meatballs. Drizzle with olive oil and bake on 180/200 deg until they are done. Some of the meatballs and potatoes will fall apart...but that's what you want. Serve with rice.
