So for my second Cookbook Challenge...I didn't consult any of my own cookbooks. I discovered Ina Paarman's website. I have being using some of her products for years, but have never visited her site. It's really nice, so easy to use.
That's were I found the best and most perfect vegetable recipe...
Butternut Treat with Ginger Biscuits...I mean how perfect for Christmas.
1 medium/small butternut (± 700 g), peeled and cubed; 2 t (10 ml) Ina Paarman's Lemon & Black Pepper Seasoning;
2 T (30 ml) melted butter; 6 ginger biscuits, finely crushed; 2 T (30 ml) brown or yellow sugar; 1 t (5 ml) ground cinnamon and lemon zest to garnish.
Peel the butternut, remove pips and cut into 2cm x 2cm cubes. Toss with the melted butter, Lemon & Black Pepper Seasoning and the crushed ginger biscuits. Add the sugar and cinnamon. Microwave, covered, on high for 5 minutes. Top with lemon zest. This dish keeps exceptionally well on a hot tray.
I made this dish, along with Yorkshire Puddings and Ina's Green Beans with Almonds for our friends Christmas celebration.
It was so good...and the smell of ginger biscuits and cinnamon just made it feel like Christmas. Definitely going to be on our menu for Christmas Day.
