I did it...

...I completed my first Cookbook Challenge. After a not so subtle hint from my sister...I realised I had completely skipped a week. 

So, last night I paged through some of my cookbooks, and found this one...Jamie Oliver's Classic Tomato Spaghetti, from his Ministry of Food book.

Yes, I know it is ridiculously easy...but it was a start. This is what is is supposed to look like...

And this is how it turned out...

Ingredients:
2 cloves of garlic; 1 fresh red chilli; fresh basil; salt and pepper; 400g dried spaghetti; olive oil; tin of chopped tomatoes; 100g Parmesan cheese.

Cook the garlic, basil and chilli in the olive oil, add the tinned tomatoes. Cook for a minute. Once the pasta is cooked add it to the sauce and serve with the Parmesan cheese.

I can't believe how easy and quick it was. And the bonus, its a vegetarian dish. We have been planning to join the Meat Free Monday movement, but I always seen to battle to find a good vegetarian dish.

And let me tell you...it was delicious, for such a simple dish, it was so good! And I have a very happy husband...

I have made that dish! Really! Truly! Probably cos I understood all the words and knew i could find the ingredients.

AND because its simple and YUM!

Looks delicious. We are also doing the Meatless Monday every week, but it includes mushrooms every time... :D
